Right now there is winter and snow in Denmark. There is also Corona and the country is closed down. So right now there is a need for coziness and creativity and cakes.
These winter cakes with chocolate and chopped almonds are easy to make and taste great.
You will need: 250g. butter, 250g. icing sugar, 2 tsp. vanilla sugar, 1 egg, 75g. almonds, 300g. wheat flour, 1 tsp. baking powder and 150g. chopped chocolate. You can also use licorice powder, dried cranberries or marzipan. It is up to you. For the icing: A little icing sugar, water and a freezer bag.
Start by stirring the soft butter together with icing sugar and vanilla. Knead well for 5 min. Add the egg and knead the dough until it is pliable and soft. Chop the almonds into almond flour and add the almond flour, baking powder and stir well. Add the chopped chocolate and stir it all together.
Take a piece of baking paper and shovel some of the dough out onto the paper and roll the baking paper together and the dough and press it together into a firm sausage. press the sides in and wrap the ends around the sausage as shown.
Put the dough sausages in the freezer and let them rest until frozen.
When the dough is frozen, they are taken out of the freezer and they are now easy to cut into thin slices which are put on the baking tray and baked at 200g. until they are lightly browned, approx. 7-8 min.
Take the cakes out and let them cool until they are cold.
Mix icing sugar with a small amount of water and stir the icing to a tough mass, it must not be able to run. Put the icing in a freezer bag and cut a small hole in one corner. Cut a hole that is too small rather than too big. You can always cut more. Spray the icing in small snowflakes on the cakes and let them cool. Then your winter cakes are ready, uhmmmnnn. Have fun; 0)
