You need: 3 cake bottoms, vanilla cake cream, gelatin, macrons, strawberry yogurt, 2 bags of frozen raspberries, 1/2 l. cream, sugar, marzipan, sugar canes, chocolate balls.
Start by putting 6 pieces of gelatin in cold water. Put the two bags of raspberries in a pan, sprinkle 100 g. of sugar and cook it well.
Let the raspberry mass cool until it is lukewarm. Pour a 1/2 l. strawberry yogurt into the raspberry mass and stir around. Then turn 1/4 l. whipped cream into the mass and let it rest until it is a little firm but still liquid.
Then whisk cake cream.
Put on a dish and put on a cake shape. I use a shape that can be set so I can shape the cake in just the size I want. Place the first layer cake bottom on the dish and set the shape to fit the cake. Put the cake cream. Then put on the next cake bottom. You may want to sprinkle the bottom with port wine, cherry wine or anything else. It gives a good taste. Next, pour the stiffened mousse on the cake and put the cake in the refrigerator. Cooling time 4-6 hours.
Roll out the marzipan and cut it into two strips that measure the height of the cake.
When the cake is stable, press the last cake bottom on the mousse into the mold and closes the cake off. Next, run a knife carefully around the mold and cake to loosen the cake from the mold. Then you can pull it up over the cake so that the cake is now free. Make sure it’s stable enough in the mousse, or you’ll have to put the shape back on and possible need time in the freezer.
Stir icing sugar with food color and distribute the glaze on top of the cake. Attach the marzipan edges around the cake. Glue the marzipan sides together by taking some cold water on your finger which will act as a glue on the marzipan. Whisk 1/4 liter whipping cream and splash whipped cream tops around the edge of the cake, just within the marzipan edge.
Garnish the cake with food glitter, I made dots with a small brush dipped in gold glitter and dotted on. Next, a little pink food glitter sprinkled on top. Put 5 sugar canes in the cake and garnish with chocolate balls. Sprinkle a little freeze-dried raspberries around the cake.
