Vanilla pickled red onion

The delicious vanilla pickled red onions are easy to make. It takes 20 min. and are good for everything from hot dishes to salads, cold cuts and cheese.


For this portion, 20 red onions, 3 dl. vinegar, 8 tsp. lemon juice, 2 sticks vanilla, 18 tbsp. cane sugar, 3 dl. water and 25 peppercorns.

Cut all the onions in half and cut them into slices. Split the vanilla sticks, scrape out the grains and mix them with a little cane sugar. Put the vinegar, lemon juice, water and vanilla sugar grains in a saucepan and bring to a boil.

Put the chopped red onions and spread the vanilla peels in clean scalded glass and pour the cooked mixture over the onions. Fill the jars with boiling water. Finally, put peppercorns in the jars before closing. Put the glasses in the fridge. They are ready after a few hours but get better from standing in the fridge for a few days.
